They are collected when they ripen, from mid-October onwards, by shaking the trees
Harvested post-mid-October, the gathering process involves employing trunk or limb vibrators, depending on the tree's size. Subsequent to harvest, a specialized peeling machine carefully peels the fruit, followed by cleansing with spring water free of chlorine and sulphites.

The fruit then undergoes natural drying in specialized dryers, where sunlight and air preserve its optimal moisture and flavor balance.

Post-drying, a calibration machine sorts the fruit by size, and it is carefully stored under special conditions before being packaged.
